Cheesy Summer Muffins

Here's a lovely, light summer muffin recipe I love and really enjoy cooking during the summer months. This savoury muffin is great for the whole family including baby so it's definitely worth adding to your weekly meal planner! Muffins are great for baby-led weaning and as this recipe is so delicious and simple to prepare, it will be a firm favourite with everyone in the family. The paprika in this recipe is mild and adds a distinct flavour for baby. The cheese I like to use is simple, yet effective... Cheddar cheese - a staple in everyone's household. And if it currently isn't in your fridge, it really should be! It's yummy and very, very versatile! My little one loves this muffin - hope yours does too! x

Makes 12 muffins. Total preparation and cooking time: 30mins.

Ingredients

  • 250g plain flour
  • 3 1/2 tsp baking powder
  • 2 tsp ground mild paprika
  • Salt to taste (optional)
  • 75ml vegetable oil
  • 1 egg
  • 175ml milk
  • 130g medium Cheddar cheese (or mature for a deeper flavour) - grated
  • 100g red onion - peeled, finely chopped

Method

Pre-heat the oven to 220C/ 425F/ gas mark 7.

Sift the plain flour into a bowl along with the baking powder, paprika and salt (if using). Then add the oil, egg, milk, cheese and onion to the bowl. Stir until all the ingredients are well combined.

Spoon the mixture into a non-stick (or well-greased) muffin tray and bake in the oven for 20-25 mins until golden and the mixture inside is fully cooked. You can check this by piercing the muffin with a cocktail stick. If the stick is clean, the inside is cooked.

When cooked, remove from the pan and place on a wire rack to cool. Serve warm with soup for adults for a light meal, and cut into smaller pieces for baby. Yum!
